Seven major styles of Chongqing Jianghu cuisines

CHONGQING (CQNEWS) -- Today, let’s talk about Chongqing Jianghu cuisines.

“Jianghu” means “the whole world,” and Jianghu cuisines refer to all kinds of dishes. Born in “Jianghu” and disappeared on the market, Jianghu cuisines barely emphasize cooking utensils. Stoves, rough bowls, large plates and basins… all of these are part of Jianghu cuisines.

In Chongqing, Jianghu cuisines can be divided into seven styles. Which do you prefer?

Peppery style

Jianghu cuisines with a peppery style are cooked with dry chili and Sichuan pepper as main condiments. Characterized by strong spicy and long-lasting salty flavors, these cuisines are spicy but not dry, tingly-numbing but not bitter.

Representative cuisines:

Peppery Chicken, Peppery Snails, Peppery Rabbit.
