According to the announce, the 145 "Chongqing Landmark Cuisine" are the works mainly from catering market players, catering industry associations and food enterprises, including various kinds of dishes with fish, chicken, duck, goose, rabbit meat, pork, beef, noodles, porridge, pickled vegetables, bean jelly, hot and sour rice noodles, hot pot, bean curd pudding, etc. involved.

At least one dish from each of Chongqing's 38 districts and counties was selected. It is reported that the "Chongqing Landmark Cuisine" selection began in 2021. In the second half of that year, under the guidance and support of the Chongqing Municipal Commerce Commission, the Chongqing Food Culture Development Research Association, the Chongqing Food Wholesale Association, the Chongqing Landmark Cuisine Professional Committee and the catering and culinary associations from 38 districts and counties began to select the special dishes from every district and county. After half a year's effort, 376 dishes were selected from thousands of declared dishes, and finally 145 "Chongqing Landmark Cuisine" were selected through various rounds of selection.

It is understood that "Chongqing Landmark Cuisine" refers to the geographical Landmark Cuisine in Chongqing, including famous dishes, desserts, banquets and snacks, Chongqing hot pot, Chongqing noodles, as well as special marinated food, sauced food, soybean food, preserved meat and other specialties. Generally speaking, it is a typical original local specialty dish with regional characteristics, cultural connotation, unique flavor, local customs of the place where it comes from, and a wide range of regional reputation, social popularity and comprehensive influence, made with local food ingredients by using local unique techniques under the national system for the regulation of place names and the protection of national place name culture.
